And just like that January was gone….. As the ground outside is covered with a smattering of snow I can’t express how much I want to bake all of your recipes. Each one brings something delicious to the cold February Table. This chilly weather just makes me want to be knee deep in sponge or encased in pastry for some strange reason. So I’m just going to roll with it….

Once more I am thrilled to be co-hosting #BakingCrumbs. I have loved reading all the clever, delicious and inspiring recipes that have linked up this month. Not that I need much encouragement to get in the kitchen at the moment. I’m sure I’m not alone either in wanting to bake like mad and eat my face off in the midst of winter, so it was great to have some “healthier sweet bakes” linked up.

However I simply could not ignore the 6 Delicious Fruity Cake bakes that called to me from the screen. They sang in raspberry and strawberry tones leaving me slathering terribly at all the sweet, sticky orangeyness everywhere. Could a fruity sponge get any better than these???? Let me show you just what I’ve been dribbling about….

What a fabulous Stunner of a Cake. What’s more it’s vegan as well as delicious. Frozen Raspberries are swirled through each Lemon sponge layer. I will just leave it here for you to stare at.

This seasonal bursting with flavour Orange Drizzle Cake just begs for you to cut a slice. The icing looks and sounds absolutely divine. Now that’s a drizzle.

I love the sound of this Bundt Cake and it’s jammy swirl running through the sponge. The White Chocolate drizzled decadently over the top with the freeze dried Strawberries is a genius addition. Raspberry and White Chocolate are one of my fave combos.

This wonderfully aromatic Orange glazed cake just called to me with it’s heady spices and beautiful shiny glaze. I can just imagine the perfect contrast between the mellow flavours and the zingy Orange syrup.
Roast Orange and Pecan Cake
It had me at Roast Orange. What a very, very clever thing to do and why haven’t we all been doing it before now?? I bet it just takes that orange flavour to another level, a caramelised level for the love of all things delicious. I just have to make this amazing recipe.

They were a huge hit with the whole family. Absolutely delicious. I even gave them to my children the next morning for Breakfast. Shhhhh!!!
