Deep Dish Apple Pie.

This is a recipe for my very best Apple Pie recipe. No one will ever dissuade me otherwise. Ever. Sweet, crisp snappy pastry with soft, cinnamon apples within....

Ingredients

  • 360 grams of plain flour
  • 150 grams of unrefined caster sugar
  • pinch of salt
  • 180 grams of cold unsalted butter
  • 2 medium free range eggs
  • 30 grams of plain flour for mixing with apples
  • ½ tsp  ground cinnamon
  • 800 grams cooking apples.I use Bramleys. Peeled and chopped into 1 cm chunks
  • 120 grams unrefined caster sugar for mixing with the apples
  • 1 beaten egg for brushing over the pie

Instructions

  • Preheat the oven to 170 C. Put the flour, butter, salt and sugar in a food processor and whizz until it resembles breadcrumbs.
  • Add the eggs and whizz again until it almost forms a ball.Tip it out onto a work surface and bring together into a ball.If it is to soft and wet then sprinkle liberally with flour and knead it a little until it firms.

  • Cover in clingfilm and refridgerate for 30 mins
  • Divide the pastry into ⅔ and ⅓ and roll out the bigger to about 2mm thick.Make sure you use flour underneath your pastry discs when rolling out.
  • Line a deep 8" or 9" pie dish carefully with the pastry.

  • I use a sharp knife against the lip of the dish to carefully trim off the excess

  • Mix the apples well with the cinnamon,sugar and flour and tip into the lined pie dish. Brush the pastry edge with a little water.

  • Carefully roll out the smaller disc to fit the top of the pie and place on top. If the pastry comes over the edge trim off the excess. Squeeze, pinch or crimp the edges together to seal. Brush all over with eggwash and make two air vents in the middle of the pie. Refrigerate for 30 minutes.

  • I like to decorate with a little extra pastry leaves and berry thing....sad I know but I loves it.

  • Bake for about 50 mins - 1 hour. Be careful to watch it in case it begins to burn and needs a hat of foil on top  to stop the edges getting too dark edges etc from burning.
  • Apply to Well Deserved Pregnant and Swollen Face.

Notes

This is a big Apple Pie and as such it does require your full attention at times especially towards the end of the baking time to make sure the pastry doesn't catch at the edges. It is so worth it though. This is a Pie that memories are made with....
