Halloween Cookies

These Halloween Cookies are just sooooo delicious and lots of halloween fun. Rather unbelievably it was my first foray into peanut cookies but I fell in love with them completely and utterly at first crunch. They were one of the most yummy cookies I had ever eaten and so simple anyone could make these craggy beauties.

Ingredients

  • 110 grams unsalted butter
  • 100 grams caster sugar
  • 100 grams light soft brown sugar
  • 1 medium egg
  • ¼ tsp vanilla extract
  • 120 grams crunchy peanut butter
  • 170 grams plain flour
  • 1 ¼ tsp bicarbonate of soda
  • ¼ tsp salt
  • 1 bag candy eyes

Instructions

  • Preheat the oven to 170 C.
  • Put the butter and sugar in a free standing mixer and cream together with a paddle attachment until pale. Alternatively use a hand held electric whisk. add the egg and beat again, scraping down the sides to make sure of an even mix.
  • Beat in the vanilla and peanut butter. Add the rest of the ingredients before beating again until a smooth dough is formed. Split the dough into two separate bowls.
  • Mix enough gel colour into the two doughs until you get your desired colours.
  • Roll six balls of each colour and place onto a lined baking tray. You will need two separate trays. Space them wide apart to allow them to spread.
  • Bake for ten to twelve mins. Remove from the oven and leave to cool for a few minutes. Gently press your candy eyes into the cookies.
  • Using a spatula remove the cookies and allow to cool on a wire rack.
  • Apply to Scary OCD Face
