Equipment

  • 1 very large frying pan or wok
  • 1 saucepan
  • 1 chopping board
  • 1 Sharp Knife
  • 1 Digital Scales
  • 1 colander noodles

Ingredients

  • 500 grams minced beef 15% fat
  • 150 grams teriyaki sauce shop bought
  • 1 medium head of brocolli finely chopped
  • 150 grams mange tout
  • 150 grams baby sweetcorn halved
  • 4 nests dried wholewheat noodles
  • 1 tbsp flour
  • 2 olive oil tbsp olive oil

Instructions

  • Cook your noodles according to the packet instructions.
  • Whilst the noodles are cooking, in the largest frying pan you've got or even better a wok, brown your mince off (cook till you can't see any more red in the mince) in 2 tbsp of oil. Sprinkle over a tbsp of flour and mix through well.
  • Add the chopped broccoli and sliced baby sweetcorn and cook on a gentle heat for a further five minutes. Stir every 30 seconds or so. Put a lid on if you have one and stir every minute.
  • Add in the mange tout and teriyaki sauce.
  • Stir through and cook for a further 5 minutes stirring regularly.
  • Add the noodles in and mix well through. I like to use a pair of forks to carefully turn the noodles over and through the beefy mixture.
  • Serve straight away whilst piping hot. Add more sauce if you like it extra saucy.

Notes

Minced Beef (Ground) 15 % fat - You can use 20% if you want as it is much cheaper and just drain the fat away after browning. You could also use chicken or turkey mince here.
To make the dish totally vegetarian then use a quorn or similar protein substitute.
Baby Sweetcorn - halve them lengthways so that they cook quicker
Head of Broccoli medium sized - chopped to approx 2 cm pieces so that they cook quicker again.
Substitute any vegetables you fancy or you want to use up.
Store leftovers covered in the fridge and reheat till piping hot.
