Boil until tender 500 grams of new potatoes. I use a sharp knife inserted to know if they are done. Between 10-20 mins depending on the size. I know in theory you can microwave new potatoes but I have always found they cook unevenly and the skin can become thick in patches, really not what you want from potato salad I knows.
Drain the potatoes and allow to cool to room temp .
Snip 12 grams chives finely and chop 50 grams red onion finely
Put all the ingredients into a mixing bowl and gently stir. I use a soft spatula so as not to break up the potatoes.
