This is a deliciously fruity Slow Cooker Moroccan Lamb Stew. Aromatic and warmly spiced, it’s easy and versatile, ensuring it’s perfect for a simple and tasty balanced meal the whole family will love, featuring lean lamb, dried fruit, squash, chickpeas, tomatoes, lemon and coriander. It can be served with couscous, rice or flatbread, and a side of your favourite green veg.

I centre our family life partly around the food I put on the table. For this reason the recipes that make it to my blog nowadays are those that are super tasty but of the no-faff variety. I often have zero energy after 4 pm and cannot face multi-tasking nor the washing up.Therefore in order to make it to the family table without weeping, I so often turn to my slow cooker for a simple and balanced meal. I love that it is all contained in one pot AND that with only a few adjustments it is piping hot and good to go. A weekday wallop.
I am also looking to put simple balanced meals on the table and my family do really enjoy eating meat several times a week. I already have a good selection of meaty slow cooker recipes on the blog that are real family favourites. Such as Slow Cooker Spaghetti Bolognese and Slow Cooker Sausage Casserole and now this Lamb dish is joining them.
Lamb is a great choice for the slow cooker. Tasty and tender after long and slow cooking, it marries well with lots of strong flavours. I like to use the neck, shoulder and leg cuts. Leg is my preferred option, as it is one of the leanest cuts. Lamb is a source of vitamin B12, B6 and zinc which can help the immune system to work normally.
There are some easy substitutions if you don’t have all the ingredients (I mention them in the ingredient list below).
Another very valid point is that it is my husband’s favourite!

Great Reasons To Eat Lean Lamb:

Slow Cooker Moroccan Lamb Ingredients
Harissa Paste - I use a Harissa Paste here for convenience. Again, I’m not looking to blend spices in my dressing gown early doors so this paste is perfect for bleary-eyed preparation. I have my own personal favourite but be careful to be in control of the heat level. Some pastes are hotter than others. Proceed with caution! You could substitute 1 Tablespoon chili paste or 1-3 teaspoons hot sauce.
Dried Prunes – I love the depth and sweetness that Dried Prunes give to the stew. A perfect backdrop for the heat and they keep in the cupboard well! You can easily substitute dried figs or raisins.
Dried Apricots – Apricots and lamb just can’t get enough of each other. I love the edgy sweetness that they bring, and they also keep in the cupboard.
Butternut Squash – Again another ingredient that loves lamb. I tend to always have diced butternut squash in the freezer and get it out in the morning to defrost. I then add it to the slow cooker half an hour to an hour before I am ready to serve. If you can’t find Butternut Squash, try fleshy squash like pumpkin, or even potatoes.
Chickpeas – Chickpeas are a great way to up the fibre for your family. I also add these nearer the serving time so they don’t overcook.
Lemon – I use the zest of a whole lemon here and the juice of half. It really makes the whole dish sing.
Chopped Tomatoes – I use chopped tomatoes here for the base of the stew however passata is another great option.
Coriander – I like to add the stalks of the bunch of coriander to the main stew at the beginning of cooking. Ideally I like to blitz them in the food processor with the prunes but chopping finely works too. It really adds a whole other flavour level. I also like to scatter the leafy coriander over the whole lot at the end of cooking.
This really is a balanced meal in itself but I like to serve it with brown rice or potatoes and a green vegetable. I use the microwavable packets of brown rice for ease. I think they’re great for mid-week.
Moroccan Slow Cooker Lamb Tips
- Season carefully
- Dial up the heat to suit your family
- Add other vegetables and dried fruits
- Top with slivered almonds (or pomegranate seeds) for added crunch
- Use other cuts of meat such as neck or shoulder. Trim excess fat.
- Freeze in a container for up to 3 months. Thaw in the fridge overnight before reheating until piping hot.
How To Make Easy Slow Cooker Moroccan Lamb Step By Step
The ingredients are simple.
Finely chop or blitz the prunes and coriander in the food processor. Also chop the apricots into small pieces.
Add all the rest of the ingredients apart from the chickpeas and butternut squash to the slow cooker pot.
Include the chopped tomatoes and stir the whole lot together.
Cook on Low for 8 hours.
An hour before serving add in the Butternut Squash and the chickpeas. Season carefully to taste.

Easy Slow Cooker Moroccan Lamb
Ingredients
- 500 grams Lean Diced Lamb
- 120 grams Dried Prunes
- 25 grams Fresh Coriander
- 120 grams Dried Apricots
- 2 tbsp Harissa Paste
- 2 x 400 grams Tins of Chopped Tomatoes
- 1 medium Lemon Zest
- ½ medium Lemon Juice
- 1 x 400 grams Tin of Chickpeas
- 150 grams Diced Butternut Squash
- Salt and Pepper To Taste
Instructions
- Finely chop or blitz the prunes and coriander in the food processor. Also chop the apricots into small pieces.
- Add all the rest of the ingredients apart from the chickpeas and butternut squash to the slow cooker pot.
- Stir the whole lot together to mix well.
- Cook on low for 8 hours. An hour before you are ready to serve the lamb add the butternut squash and chickpeas.
- Scatter the fresh coriander on top to serve.
