These chocolate crinkle cookies could NOT be easier to make and so effective it feels spookily wrong.
The Easiest Halloween Cookies Recipe
I came across the idea by accident really, with the simple addition of a pair of googly eyes Halloween was right there in a baking instant. I actually squealed with excitement.
Ingredients
You will need -
4 tbsp Oil - vegetable or sunflower (olive oil will give them a slight olive flavour)
200 grams Sugar (1 cup) - any caster or granulated sugar
200 grams (7 oz) Flour - self raising or if using plain flour then add 1 tsp baking powder
60 grams (2.12 0z) Cocoa Powder - darker the better but not drinking cocoa/chocolate
2 Eggs - large
100 grams ( 3.53 oz) Baking Chocolate Chips - needs to be cooking chocolate so that the chips don't melt but you could cut up a cooking chocolate bar too.
50 grams (1.76 oz ) Icing Sugar
Main equipment required is either a free standing mixer, large mixing bowl and electric hand whisk or wooden spoon, lined or greased large flat baking tray and scales.
There is a full recipe card with exact ingredients and instructions at the bottom of this post.
Method
- Put the sugar, oil and cocoa into your mixing bowl.
- Mix together
- Add your eggs and beat until mixed well together.
- Tip in the flour and chocolate chips
- Mix well together.
- Now comes the fun part kiddoes. Put your icing sugar in a bowl and take a small amount of mixture in your hand. I weigh mine out to be about 40 grams each. Roll into a ball and then roll around in the icing sugar to fully coat them. Place on your lined baking tray.
- This makes about sixteen of them so you will have two trays to bake. I do them one at a time for approx 12 minutes. They will set as they cool. So if you want them fudgy in the middle then don't bake them for any longer.
- As soon as they are out of the oven carefully press a pair of googly eyes into the appropriate places on your cookies.
Tips & Tricks
- If your mixture is too sticky to roll then chill for thirty minutes in the fridge.
- Use an independent oven thermometer to get your oven temperature right.
- Bake for longer to get a crisper cookie.
- Let the kids decorate them with icing and sprinkles for a fun Halloween activity.
- Store them in an air tight container for up to a week.
