The Easiest Valentine Cookies

These are the world's easiest Valentine Cookies. The butteriest of shortbread with the pinkest of heart shaped sprinkles. Valentine gorgeousness right here. I adore them.

These golden beauties are made from my favourite shortbread recipe. They are always off the scale delicious and just so versatile. Dip them in chocolate or throw in some chocolate chips and you've got yourself a heavenly mouthful of buttery fabulousness.

So if you're looking for some Valentine's Day sugary sweet action that's easy on the clearing up then I'm your gal.

Valentine Cookies Recipe

This is the easiest cookie recipe in Valentine town. A perfect one for the kids to do and it takes only a few moments to bring together. No fuss, no melting of chocolate or beating of icing although you could if you have the time and loving inclination. I usually have neither when it comes to my children in the kitchen.

You will need

  • heart shaped cookie cutter
  • scales
  • mixing bowl if using hand held mixer or wiooden spoon
  • mixer or electric hand held beater or food processor or wooden spoon
  • rolling pin
  • baking tray lined with baking paper or reusable silicone
  • cooling rack

Ingredients

250 grams (8.8 oz) Butter - unsalted if you have it. Baking spread won't do it has to be butter.

150 grams (5.29 oz) Sugar - white caster sugar preferably to keep the dough pale but it will be fine to use unrefined or granulated.

350 grams (12.3 oz) Flour - it has to be plain flour as you don't want a rise.

50 grams (1.8 oz) Valentine Sprinkles - I prefer the ones without the hard balls in as they are not the easiest to eat!

Method

I find it super easy to make these shortbread cookies either in my food processor or free standing mixer. But a mixing bowl and a hand held electrical mixer is fine too as is a plain old wooden spoon. You would be better to get the butter softer though to make the process much easier.

  • Put the 3 ingredients in a free standing mixer, mixing bowl or food processor and mix.

  • Mix together until you get a shaggy dough thing going on.

  • Add the valentine sprinkles and mix again. If using a food processor then tip into a mixing bowl and mix together by hand.

  • Knead and squeeze it together with your hands either tipped out onto the work surface or in the bowl. Keep kneading until it becomes soft and sticks together completely.

  • Tip out onto a lightly floured work surface and roll the smooth dough out to about 1 cm thick.
  • Cut out your heart shapes. I get about 18 and bake in two batches but it will depend on your size of cutter.

  • Transfer to your baking tray.

  • Bake for about 12 minutes or until slightly golden at the edges.
  • Remove carefully after a few minutes out of the oven onto a wire rack to cool completely.

Expert Tips

  • If your mixture gets too soft chill it in the fridge for 30 minutes.
  • Make your biscuits ahead and chill covered in the fridge until you want to bake them just add a few more minutes to the baking time.
  • Only allow to colour a little when baking or they will be overbaked.
  • Use a fish slice to carefully remove from your baking tray.
  • Store in a air tight container for up to a week.

Ingredients
